Director of Food & Beverage Operations

About the role

The Director of Food & Beverage will lead all F&B operations for a cluster of Ginger Hotels in Mumbai. Reporting to hotel leadership, this senior professional will ensure that restaurants, bars, banquets and in‑room dining deliver the brand’s high standards of quality, presentation and guest satisfaction.

Key responsibilities

• Oversee daily operations of all food and beverage outlets, including restaurants, bars, banqueting and in‑room dining.
• Collaborate with culinary teams on menu development and seasonal offerings.
• Manage inventory, procurement and supplier relationships to control costs.
• Set and monitor revenue and profitability targets, implementing budgeting and cost‑control measures.
• Ensure compliance with hygiene, safety and food‑safety regulations.
• Coach, mentor and schedule F&B staff, fostering a high‑performance culture.
• Address guest concerns promptly to maintain high satisfaction scores.
• Analyse performance metrics and support marketing initiatives for F&B outlets.

Required profile

• Proven leadership experience in hotel or hospitality F&B management at a comparable scale.
• Strong understanding of menu planning, outlet management and kitchen workflows.
• Demonstrated ability to drive customer satisfaction through consistent service quality.
• Experience in budgeting, cost control and revenue management within F&B departments.
• Knowledge of food safety, hygiene regulations and compliance standards.
• Excellent communication, problem‑solving and organizational abilities.
• Relevant hospitality or hotel management degree or diploma preferred.
