Demi Chef de Partie Pastry (Fixed‑Term) – SBI

About the role

The Demi Chef de Partie Pastry will supervise and assist team members in preparing high‑quality pastry items for passengers and crew aboard the ship. This hands‑on role ensures compliance with food safety, waste management and production standards.

Key responsibilities

• Direct and support team members in pastry production, following company recipes and USPH standards.
• Maintain waste separation, environmental compliance and sanitation in the galley.
• Monitor ingredient consumption, report fluctuations and ensure cost‑efficient production.
• Check deliveries for quantity and quality, store items properly, and report equipment issues.
• Coach staff on menu knowledge, culinary techniques, product handling and presentation.

Required profile

• Minimum 3 years experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• At least 1 year supervisory experience in a multicultural environment.
• Proven ability to train and supervise at least two culinary subordinates.
• Certification from an accredited advanced food‑safety program.

Required skills

• Advanced food safety knowledge and certification.
• Extensive kitchen machinery and knife‑safety expertise.
• Ability to read, write and speak English fluently.
