First Commis (TAM) in Galley – HAL

About the role

Join the galley team as a First Commis (TAM) responsible for preparing and handling food for guests and crew according to company menus and recipes.

Key responsibilities

• Comply with waste separation and environmental policies, minimizing food waste.
• Maintain quality, quantity, attractiveness and correctness of all food items.
• Implement food handling and cleaning procedures in line with USPH and HACCP standards.
• Properly use, maintain and return equipment and utensils, reporting any issues to the Chef de Partie.
• Ensure guest satisfaction scores for food ratings are met.
• Maintain high productivity, cleanliness and sanitation throughout the shift.

Required profile

• 2+ years experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience handling high‑volume service of at least 100 meals per service.
• Certification from an accredited advanced food safety program.
• Preferred degree from an accredited culinary college or university.

Required skills

• Food safety certification (HACCP, USPH).
• Knowledge of VSP (preferred).
• Extensive kitchen machinery and knife safety knowledge.
• Proficient English reading, writing and speaking.
