Chef de Partie – Sustainable Café (CDP/DCDP/Commis)

About the role

Ruby's Organic Coffee is seeking a passionate Chef de Partie to join its sustainable café in Vagator, Goa. The role is ideal for a kitchen professional who wants to explore food through the lens of anthropology, work with fresh, seasonal produce, and contribute to a menu rooted in regional traditions.

Key responsibilities

• Prepare and execute multi‑cuisine dishes while maintaining high quality and consistency.
• Assist in menu development and adapt recipes to seasonal, locally sourced ingredients.
• Follow and uphold standard operating procedures (SOPs) for food safety and clean cooking.
• Support bakery production when required, applying basic pastry techniques.
• Collaborate with the team to uphold the café’s upcycled, sustainable ethos.

Required profile

• Experience as a CDP, DCDP, or Commis I in a multi‑cuisine environment.
• Curious, disciplined, and eager to learn and unlearn culinary practices.
• Comfortable working onsite and following SOPs while contributing ideas.
• Passion for fresh produce, regional food traditions, and clean cooking methods.

Required skills

• Multi‑cuisine cooking techniques.
• Basic bakery knowledge (bonus).
• Understanding of food safety SOPs.
