1st Commis (Pastry) – HAL – PTAMI

About the role

The 1st Commis TAM will support the Pastry Chef in preparing and handling food for guests and crew aboard the HAL vessel operating out of PTAMI, Indonesia. This role involves working across pastry stations, ensuring high standards of productivity, cleanliness and sanitation.

Key responsibilities

• Assist in the preparation of all pastry items according to company recipes.
• Maintain and return equipment and utensils properly to avoid damage.
• Report any malfunctioning equipment to the Pastry Chef.
• Follow guidelines and instructions established by the Pastry Chef.
• Maintain high levels of productivity, cleanliness and sanitation throughout the shift.
• Handle lido prep, floating and breakfast duties as needed.
• Adapt to any pastry station based on operational needs.
• Ensure compliance with company recipes, SOPs and training requirements.
• Maintain company property and cleaning standards at the workstation.
• Perform other job‑related functions as assigned, including health, safety and security tasks.

Required profile

• At least 1 year experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience in high‑volume operations (minimum 100 meals per service).
• National Certificate in Pastry and certification from an accredited advanced food safety program.
• Ability to read, write and speak English fluently.
• Marlin's Test score of 60 or higher.
