Demi Chef de Partie – Garde Manger

About the role

The Demi Chef de Partie – Garde Manger will join Marriott's culinary team in Pune, preparing high‑quality cold dishes and supporting the kitchen’s daily operations. You will work closely with the Chef de Partie and other kitchen staff to ensure consistency, safety, and presentation standards are met.

Key responsibilities

• Prepare special meals, cold platters, and garnish items according to recipes and presentation standards.
• Regulate oven, broiler, grill and roaster temperatures and manage thawing of frozen items.
• Maintain food logs, monitor portion control, and ensure proper storage and rotation of inventory.
• Communicate menu specials, out‑of‑stock items, and excess food usage to the Chef and service staff.
• Assist with hiring, training, scheduling and performance coaching as directed by management.
• Follow all safety, security and hygiene policies, reporting any incidents or maintenance needs.

Required profile

• Technical, trade or vocational school degree related to culinary arts.
• Minimum 3 years of experience in a garde‑manger or cold‑kitchen environment.
• No prior supervisory experience required.
• Ability to work standing for long periods and lift objects up to 25 lb.

Required skills

• Food preparation and cold‑kitchen operations.
• Knowledge of temperature control for ovens, grills and roasters.
• Understanding of portion control, food logging and inventory rotation.
