Commis 2 – South Indian Cuisine (Kochi)

About the role

We are looking for a detail‑oriented Commis 2 to join our culinary team in Kochi. Working under senior chefs, you will help prepare authentic South Indian dishes while maintaining high standards of quality, hygiene, and kitchen organization.

Key responsibilities

• Prepare and cook South Indian dishes following established recipes.
• Maintain mise en place at the assigned station, ensuring ingredients and equipment are ready.
• Follow food safety and hygiene protocols to keep the kitchen clean and sanitary.
• Assist senior chefs with cutting, grinding, and blending spices and other ingredients.
• Operate stoves, grinders, and traditional cooking vessels safely and efficiently.
• Monitor cooking times and temperatures to meet quality standards.
• Communicate inventory needs to kitchen management.
• Support smooth service during peak hours through teamwork.

Required profile

• Proficiency in South Indian cooking techniques and traditional preparation methods.
• Knowledge of authentic South Indian recipes and regional variations.
• Understanding of South Indian spices, flavor profiles, and ingredient combinations.
• Strong awareness of food safety and hygiene practices.
• Ability to work efficiently in a fast‑paced kitchen environment.
