Commis 2 – North Indian Cuisine

About the role

Accor is looking for a detail‑oriented Commis 2 specialized in North Indian cuisine to join its culinary team in Kochi, India. Working under senior chefs, you will help prepare authentic dishes while upholding the highest standards of quality, safety and presentation.

Key responsibilities

• Prepare and cook North Indian dishes following recipes and chef specifications.
• Execute mise en place and keep the workstation clean and organized throughout service.
• Operate kitchen equipment safely, including tandoors, grills and stovetops.
• Follow food safety and hygiene protocols consistently.
• Assist in ingredient preparation such as cutting, marinating and portioning.
• Collaborate with team members to ensure timely and accurate food preparation.
• Monitor cooking times and temperatures to maintain consistent quality.
• Respond promptly to chef instructions and adapt to changing kitchen demands.
• Maintain inventory awareness and communicate ingredient needs to senior staff.
• Support kitchen operations with setup, breakdown and general maintenance.

Required profile

• Proficiency in North Indian cooking techniques and flavor profiles.
• Strong knowledge of North Indian spices, ingredients and traditional methods.
• Experience with tandoor and clay‑oven cooking.
• Solid understanding of food safety, sanitation and hygiene standards.
• Competent knife skills and food preparation techniques.
• Ability to work efficiently in a fast‑paced kitchen environment.
• Strong organizational and time‑management abilities.
