Senior Food & Beverage Manager – Lonavala

About the role

Della Resorts & Adventure is looking for a dynamic Senior Food & Beverage Manager to lead its diverse F&B portfolio at the Lonavala resort. The role oversees multiple specialty restaurants, bars, banquet operations, in‑room dining and outdoor event catering, ensuring exceptional guest experiences while driving commercial performance.

Key responsibilities

• Develop and execute the overall F&B strategy across all outlets, driving innovation in dining concepts and revenue generation.
• Oversee day‑to‑day operations of restaurants, lounges, cafés and specialty venues, maintaining luxury service standards.
• Lead banquet and event F&B services for weddings, corporate functions and large celebrations, coordinating with sales and events teams.
• Own the P&L for the entire F&B division, managing food, beverage and labour costs, and implementing menu engineering and pricing strategies.
• Build, mentor and manage a high‑performing F&B leadership team, handling recruitment, training and succession planning.
• Ensure guest satisfaction at all touchpoints, handling VIP guests and service escalations professionally.
• Maintain compliance with food safety, hygiene and statutory regulations, and continuously improve SOPs.

Required profile

• 15–20+ years of progressive experience in Food & Beverage operations, preferably with luxury hospitality brands.
• Minimum 5 years in a senior leadership role overseeing multiple restaurants and banquet operations.
• Proven track record of managing high‑volume, multi‑outlet F&B businesses and delivering profitable results.
• Strong financial acumen with full P&L responsibility experience.
• Excellent leadership and team‑development capabilities.
