Senior Food & Beverage Manager – Lonavala

About the role

Della Resorts & Adventure is looking for an accomplished Senior Food & Beverage Manager to lead its diverse F&B portfolio in Lonavala. The role combines strategic leadership with hands‑on oversight of restaurants, bars, banquet operations, in‑room dining and outdoor catering, aiming to deliver exceptional guest experiences and strong commercial results.

Key responsibilities

• Define and execute the overall F&B strategy across multiple outlets, driving innovation and revenue growth.
• Oversee daily operations of restaurants, lounges, cafés and specialty dining venues, ensuring luxury service standards.
• Lead banquet and event F&B services for weddings, corporate functions and large celebrations, coordinating with sales and events teams.
• Own the P&L for the entire F&B division, managing food & beverage costs, payroll and departmental expenses.
• Build, mentor and manage a high‑performing F&B leadership team, handling recruitment, training and succession planning.
• Maintain the highest guest satisfaction levels, handling VIP guests and service escalations.
• Ensure compliance with food safety, hygiene, health and statutory regulations, implementing SOPs and continuous improvement.

Required profile

• 15–20+ years of progressive experience in Food & Beverage operations.
• Minimum 5 years in a senior leadership role overseeing multiple restaurants and banquet operations.
• Proven experience with luxury hospitality brands and high‑volume, multi‑outlet environments.
• Strong financial acumen with full P&L responsibility.
• Demonstrated ability to lead large teams and develop future leaders.
