Director of Restaurant Operations – Premium Chain

About the role

We are seeking an accomplished Director of Restaurant Operations to lead a portfolio of premium, up‑market restaurants in Mumbai. This senior leadership position carries end‑to‑end responsibility for guest experience, operational excellence, financial performance and brand consistency across multiple concepts.

Key responsibilities

• Lead end‑to‑end operations across multiple premium restaurants, ensuring high standards of food, service and guest experience.
• Own P&L performance, driving revenue, profitability, productivity and cost optimisation.
• Build and maintain rigorous operating standards covering service, hygiene, food quality, safety and overall experience.
• Mentor and develop Restaurant Managers and operating teams, fostering a strong performance and service culture.
• Drive operational metrics such as sales, food & beverage costs, manpower productivity, guest satisfaction and profitability.
• Collaborate with Culinary, Finance, HR, Marketing and other functions to achieve business objectives.
• Strengthen SOPs, systems and reviews to create consistency across locations.
• Use guest feedback and data to continuously improve performance.
• Support new restaurant openings and expansion, ensuring operational readiness and successful stabilisation.
• Partner with senior management on growth and operational strategy.

Required profile

• 15+ years of experience in restaurant operations, with significant multi‑unit responsibility.
• Strong background in premium/up‑market restaurant chains, luxury hospitality or high‑quality F&B concepts.
• Proven ability to manage multiple restaurants and large operating teams.
• Deep understanding of restaurant P&L, revenue, food cost, manpower cost and operating margins.
• Exceptional focus on guest experience and service excellence.
• Demonstrated people‑leadership skills to develop high‑performing managers and teams.
• Experience establishing systems, SOPs and operational discipline across locations.
• Exposure to new restaurant openings, expansion and scaling operations is highly desirable.
• Strong commercial judgement, analytical ability and stakeholder‑management skills.
