About the role
The Commis I supports the culinary team at Courtyard by Marriott Chennai, preparing a variety of dishes while maintaining high standards of food safety, quality, and presentation. This full‑time, on‑site position is ideal for candidates with solid kitchen experience who thrive in a fast‑paced hospitality environment.
Key responsibilities
- Prepare special meals, substitute items, and cold foods according to recipes and presentation standards.
- Regulate oven, broiler, grill, and roaster temperatures; monitor food quality and quantity.
- Thaw frozen items in refrigeration units and maintain accurate food logs.
- Communicate with chefs about excess inventory for daily specials and inform service staff of menu changes.
- Assist with hiring, training, scheduling, and performance coaching as directed by management.
- Follow all safety, security, and sanitation policies; report maintenance issues and incidents.
Required profile
- Minimum three years of relevant food‑service or kitchen experience.
- Technical or vocational education in culinary arts or related field (preferred).
- Ability to stand, walk, bend, lift and carry objects up to 25 lb for extended periods.
- Professional appearance, confidentiality, and strong teamwork orientation.
Required skills
- Food preparation and cooking techniques.
- Knowledge of temperature control for ovens, grills, and roasters.
- Accurate portioning, plating, and garnish application.
- Basic record‑keeping for food logs and inventory.
