Commis Chef – Luxury Hotel Kitchen

About the role

Six Senses Vana is seeking an enthusiastic Commis Chef to join its luxury kitchen team. You will support the creation of high‑quality dishes while upholding the brand’s commitment to sustainability, wellness, and exceptional guest experiences.

Key responsibilities

• Perform daily and weekly kitchen procedures, including temperature checks, food labeling, dating, and proper storage.
• Prepare all assigned food items to standard, adhering to portion sizes, cooking methods, and quality benchmarks.
• Execute precise plate presentation and garnish setup for every dish.
• Maintain strict compliance with fire, hygiene, and safety policies.
• Keep equipment and work areas clean and in good working order.
• Uphold Six Senses service guidelines, LQA standards, and respond to guest feedback.

Required profile

• High school diploma or equivalent; 1‑3 years of kitchen experience in a full‑service outlet or similar setting.
• Hospitality diploma or degree is preferred.
• Fluent English communication skills.
• Valid alcohol awareness certification and/or food service permit or health/food handler card as required locally.

Required skills

• Operation of broiler equipment.
• Meat and fish cookery knowledge.
• Proficient knife skills.
• Food labeling, temperature monitoring, and portion control.
• Plate presentation and garnish techniques.
• Hygiene and safety compliance.
• Understanding of farm‑to‑table concepts.
• Alcohol awareness certification.
• Food handler permit or equivalent.
