Senior Kitchen Stewarding Manager

About the role

We are looking for an experienced and disciplined Kitchen Stewarding Manager to oversee all stewarding operations across kitchen, restaurant, banquet and other food & beverage outlets. The role is responsible for maintaining the highest standards of hygiene, sanitation, equipment handling, waste management and team performance.

Key responsibilities

• Manage day‑to‑day stewarding activities, ensuring timely cleaning and sanitisation of crockery, cutlery, glassware, utensils and work areas.
• Implement and monitor HACCP, food safety, health and safety standards, conducting regular inspections and corrective actions.
• Supervise, train and schedule the stewarding team, allocate duties and evaluate performance.
• Control inventory of cleaning chemicals, consumables and PPE, minimise waste and optimise costs.
• Oversee operation and maintenance of dishwashing machines, garbage disposal systems and other stewarding equipment, coordinating preventive maintenance with engineering.

Required profile

• Strong knowledge of hospitality hygiene standards, kitchen sanitation and HACCP practices.
• Proven experience in managing stewarding teams, scheduling and performance coaching.
