Indian Chef Commis I

About the role

Palmdale Resort is seeking an Indian Chef Commis I to join its culinary team. This full‑time, on‑site position supports the preparation, cooking, and presentation of authentic Indian dishes while upholding the resort's high standards of quality, hygiene, and guest service.

Key responsibilities

• Prepare mise en place for Indian stations, including basic sauces, gravies, breads, and starters.
• Assist with tandoor operation and curry section duties as assigned.
• Follow standard recipes to ensure consistent taste, portion size, and plating.
• Maintain a clean workstation and adhere to food safety and hygiene protocols.
• Label, store, and rotate ingredients correctly (FIFO) and manage inventory for the Indian section.
• Support senior chefs during service to ensure timely order execution.

Required profile

• Foundational culinary skills in Indian cuisine, including knowledge of curries, gravies, breads, and appetizers.
• Ability to follow recipes, control portions, and meet plating standards.
• Strong understanding of kitchen hygiene and food safety practices.
• Team‑oriented mindset with effective communication and the ability to work under pressure during peak hours.
• Prior experience as a Commis Chef or in a similar role within an Indian or multi‑cuisine restaurant is preferred.
• Willingness to work flexible shifts, including weekends and holidays.
• Culinary diploma or professional cookery certificate is an advantage but not mandatory.
