Food & Beverage Controller

About the role

The Food & Beverage Controller ensures accurate cost control, inventory management and financial reporting for the hotel's F&B operations. Working closely with the Executive Chef, F&B Manager, Materials Manager and other internal partners, the role supports efficient processes and data‑driven decision making.

Key responsibilities

• Administer daily F&B administrative tasks and maintain documentation of goods movement.
• Liaise with internal customers (Executive Chef, F&B Manager, Materials Manager, Bar Tender) and maintain strong supplier relationships.
• Prepare and issue cost reports, variance analyses and daily audit reports for management review.
• Reconcile daily and monthly food and beverage sales against POS reports, explaining any deviations.
• Conduct inventory audits, surprise stock checks and manage the monthly inventory process in line with hotel policies.
• Verify duty meals, entertainment checks and void checks, preparing reports for approval.
• Monitor liquor, minibar and recipe inventories, ensuring accurate cost allocation and compliance with excise regulations.
• Supervise receiving, storekeeping activities and ensure all goods movements are properly supported.

Required profile

• Proven ability to liaise effectively with internal stakeholders such as chefs, managers and bar staff.
• Experience preparing detailed cost and variance reports for senior management.
• Strong understanding of inventory control, stock reconciliation and audit procedures.
• Capability to maintain supplier relationships and ensure compliance with local excise regulations.
