Culinary Associate

About the role

The Culinary Associate supports the kitchen team in delivering high‑quality food preparation and service in line with Fairmont’s standards. This position ensures daily operations run smoothly, from stocking ingredients to maintaining hygiene and safety protocols.

Key responsibilities

• Stock the assigned kitchen with raw materials and ingredients each day.
• Operate all electrical and mechanical kitchen equipment safely.
• Execute basic cooking methods, cut ingredients, and prepare daily mise‑en‑place for the designated station.
• Prepare dishes according to standard recipe cards, controlling portions and minimizing waste.
• Apply HACCP and hotel food‑safety standards, reporting hazards or equipment issues promptly.
• Maintain cleanliness of equipment and production areas.
• Follow fire, life‑safety, and emergency procedures.
• Attend briefings, meetings, and training sessions as required.

Required profile

• High school diploma or equivalent; culinary training or certification is a plus.
• Previous kitchen or food‑service experience is advantageous but not mandatory.
• Knowledge of basic food‑preparation techniques and kitchen tools.
• Ability to follow instructions and adhere to safety standards.

Required skills

• Food safety and HACCP compliance.
• Operation of kitchen equipment (electrical and mechanical).
• Basic cooking techniques and mise‑en‑place preparation.
