Commis II – Kitchen Assistant

About the role

Join the pre‑opening team at Fairmont Udaipur Palace as a Commis II, supporting the kitchen in delivering high‑quality food service. You will work in a dynamic, five‑star environment, ensuring standards of preparation, safety and presentation are consistently met.

Key responsibilities

• Stock the assigned kitchen daily with raw materials and ingredients.
• Operate all electrical and mechanical kitchen equipment safely.
• Execute basic cooking methods, cut ingredients and prepare daily mise‑en‑place for your station.
• Prepare dishes according to standard recipe cards, maintaining portion control and minimizing waste.
• Apply HACCP food safety and hygiene standards throughout all tasks.
• Clean and maintain equipment in the production area.
• Report any hazards, unsafe conditions or equipment issues to the supervisor promptly.
• Follow fire, life‑safety and emergency procedures.
• Attend briefings, meetings and training sessions as required.

Required profile

• Completed a kitchen apprenticeship or chef training course (minimum one year).
• 1–2 years experience in a five‑star international hotel kitchen.
• Ability to read and follow recipes accurately.
• Good communication skills and professional personal appearance.

Required skills

• HACCP food safety knowledge.
• Operation of kitchen electrical and mechanical equipment.
• Food preparation and basic cooking techniques.
