Senior Kitchen Stewarding Manager

About the role

The Senior Kitchen Stewarding Manager will lead all stewarding operations across kitchens, restaurants, banquet areas and other food‑and‑beverage outlets. The role ensures the highest standards of hygiene, sanitation and safety while managing a dedicated stewarding team.

Key responsibilities

• Oversee day‑to‑day stewarding activities, including cleaning and sanitising crockery, cutlery, glassware, utensils and work areas.
• Monitor dish‑washing and pot‑washing processes to meet hygiene standards and ensure equipment is available and functional.
• Maintain cleanliness of back‑of‑house areas, floors, walls, drains, storage and waste zones.
• Implement HACCP, food‑safety and health‑safety procedures, conducting regular inspections.
• Manage chemical storage, labeling, dilution and safe usage, and train staff on PPE and safety protocols.
• Supervise, schedule and train the stewarding team, allocate duties and evaluate performance.
• Control inventory of cleaning chemicals, consumables, PPE and stewarding supplies, minimizing waste and cost.
• Coordinate preventive maintenance of dishwashers, garbage disposals and other equipment with engineering.

Required profile

• Extensive knowledge of hospitality hygiene standards, kitchen sanitation and HACCP practices.
• Proven experience in chemical handling, equipment maintenance and team leadership.
• Ability to organise schedules, manage inventory and optimise operational costs.
