Assistant Manager - Hygiene

About the role

The Assistant Manager – Hygiene will lead the hotel’s hygiene and sanitation programme, ensuring compliance with Hyatt International standards, local regulations and guest expectations. This role is pivotal in maintaining the highest level of cleanliness and food safety across all operational areas.

Key responsibilities

• Manage and monitor hygiene and sanitation standards throughout the property, including kitchens, restaurants, banquet and back‑of‑house areas.
• Control the hygiene function as a cost centre, aligning resources with business levels and brand requirements.
• Ensure full compliance with corporate strategies, brand standards and statutory regulations.

Required profile

• Degree, diploma or certification in Food Science, Microbiology or Hotel Management with a focus on Food Safety.
• Minimum 2 years experience as an Assistant Manager – Hygiene or Hygiene Officer in a 5‑star hotel or large‑scale food establishment.
• Valid HACCP or Food Safety certification and strong knowledge of local food safety regulations.
• Good communication and administrative abilities.
