Restaurant Manager

About the role

Sorano Mumbai is seeking an energetic Restaurant Manager to lead the floor across lunch, dinner, aperitivo and late‑evening service. The ideal candidate loves the fast‑paced restaurant environment, enjoys building relationships with guests, and can keep the dining room running smoothly from start to finish.

Key responsibilities

• Oversee the entire guest experience, staying visible on the floor and addressing issues before they impact diners.
• Recruit, train, coach and develop a confident front‑of‑house team, leading pre‑shift briefings and daily service.
• Drive commercial performance by meeting sales targets, optimizing table utilisation, upselling, and controlling labour and operating costs.
• Manage reservations, walk‑ins and wait‑lists, ensuring efficient pacing, table turns and a welcoming entrance even during peak periods.
• Collaborate with the Chef and Bar team to maintain food and beverage standards, know the menu inside out, and coordinate service flow.

Required profile

• Passion for hospitality and a deep understanding of restaurant operations.
• Strong leadership style focused on coaching rather than policing.
• Analytical mindset – able to review daily numbers, identify trends and implement improvements.
• Excellent interpersonal skills to engage guests, build regulars and handle guest recovery with confidence.

Required skills

• Experience managing a full‑service restaurant floor.
• Proficiency in reservation and table‑management systems.
• Ability to read a dining room, anticipate issues and act proactively.
• Knowledge of food, wine and cocktail menus to guide staff recommendations.
