Food & Beverage Controller

About the role

We are seeking an experienced Food & Beverage Controller to oversee and optimise F&B costs, inventory, purchasing controls and profitability while maintaining high quality and operational standards.

Key responsibilities

• Monitor daily F&B costs, analyse cost variances, prepare COGS reports and conduct menu costing.
• Manage inventory systems, perform stock counts and investigate inventory discrepancies.
• Monitor purchasing and receiving processes, verifying quantity and quality of goods received.
• Collaborate with chefs on menu engineering, recipe costing, portion control and menu profitability.
• Track food wastage and identify opportunities for loss prevention and cost optimisation.
• Prepare regular cost and inventory reports, ensuring proper documentation and audit compliance.
• Maintain accurate stock management by monitoring food cost and inventory levels.
• Ensure quality and consistency of goods received and adherence to operational standards.

Required profile

• 10+ years of relevant experience in F&B controlling.
• Strong analytical and numerical skills.
• In‑depth knowledge of food costing, inventory management and accounting principles.
• Proficiency in MS Excel and POS systems.
• Excellent communication and coordination abilities within hospitality/F&B operations.
