F&B Controller

About the role

The F&B Controller will oversee cost control, inventory management, and financial reporting for the food and beverage operations at Pullman Chennai. This role ensures accurate tracking of all goods movements, compliance with cost policies, and timely preparation of cost analyses.

Key responsibilities

• Study, analyze and report cost variances and inventory discrepancies.
• Manage monthly inventory processes in line with hotel policies.
• Supervise daily receiving, storekeeping, and gate‑pass monitoring.
• Prepare and issue cost reports, including daily and monthly F&B cost analysis.
• Cost recipes, inter‑kitchen transfers, and employee consumption.
• Define and enforce min/max stock levels and par stock systems.
• Reconcile POS sales data with inventory records and investigate discrepancies.
• Conduct surprise audits for buffets and banquet plate counts.
• Ensure compliance with state excise regulations and submit statutory reports.

Required profile

• Bachelor’s degree in Accounting or Finance.
• Minimum 2 years of experience in a similar F&B cost control role.
• Strong professionalism and business acumen.

Required skills

• Advanced Excel proficiency.
