Sous Chef – Italian Restaurant

About the role

The Sous Chef will join Restorante Sorano in Kolkata, supporting the Head Chef in delivering authentic Italian-inspired cuisine. This full‑time, on‑site position involves overseeing daily kitchen operations, maintaining high standards of quality and presentation, and contributing to menu development.

Key responsibilities

• Supervise food preparation and coordinate cooking schedules to ensure timely service.
• Maintain dish quality, plating standards, and consistency across all menu items.
• Assist in planning and executing seasonal menus, specials, and event offerings.
• Manage inventory, control portions, and oversee ordering and stock rotation to minimise waste.
• Train and mentor kitchen staff, promoting safe and hygienic work practices.
• Ensure compliance with food safety regulations, HACCP principles, and sanitation standards.
• Collaborate with management on guest feedback and continuous improvement initiatives.

Required profile

• Strong culinary background with experience in Italian or European cuisine, including sauces, pasta, baking, and plating.
• Proven ability to supervise kitchen teams, delegate tasks, and maintain composure during high‑volume service.
• Knowledge of HACCP, food safety, and sanitation standards.
• Experience in inventory management, cost control, and portioning.
• Effective communication and teamwork skills.
• Formal culinary training or equivalent hands‑on experience; prior Sous Chef or senior line‑cook role required.
