Commis 2 – North Indian Cuisine

About the role

We are looking for a motivated Commis 2 specialized in North Indian cuisine to join our kitchen team at Accor’s hotel in Kochi. Working under senior chefs, you will help prepare authentic North Indian dishes while upholding the highest standards of quality, safety and presentation.

Key responsibilities

• Prepare and cook North Indian dishes following recipes and chef specifications.
• Execute mise en place, maintain a clean and organized workstation throughout service.
• Operate kitchen equipment safely, including tandoors, grills and stovetops.
• Follow food safety and hygiene protocols to ensure compliance with health standards.
• Assist in ingredient preparation such as cutting, marinating and portioning.
• Collaborate with team members to ensure timely and accurate food preparation.
• Monitor cooking times and temperatures to maintain consistent quality.
• Support kitchen operations with setup, breakdown and general maintenance.

Required profile

• Detail‑oriented and efficient in a fast‑paced kitchen environment.
• Ability to follow chef instructions and adapt to changing demands.
• Strong organizational and time‑management skills.

Required skills

• Proficiency in North Indian cooking techniques and flavor profiles.
• Strong knowledge of North Indian spices, ingredients and traditional methods.
• Experience with tandoor and clay oven operations.
• Solid understanding of food safety, sanitation and hygiene standards.
• Competent knife skills and food preparation techniques.
