Chef de Partie – Indian Cuisine

About the role

Accor is seeking an experienced Chef de Partie to lead the Indian section of its kitchen. You will ensure high‑quality preparation, maintain stock rotation, and support the culinary team in delivering authentic Indian dishes.

Key responsibilities

• Arrive on time in full uniform and with name badge.
• Organise shift planning and mise‑en‑place for the Indian station.
• Assign tasks to Demi Chefs and Commis Chefs and verify correct execution.
• Prepare daily wine, dry‑store, food requisitions and kitchen transfers for approval.
• Monitor portion sizes, quantities and recipe compliance.
• Complete daily check‑lists for mise‑en‑place and food storage.
• Report equipment failures and follow up on repairs.
• Maintain a clean, tidy work area and update the information board with banquet changes.
• Document accidents and sickness in the log book.
• Assist the Chef de Cuisine in developing new recipes and menu ideas.
