Production Manager – Commissary Operations

About the role

We are seeking an experienced Production Manager to lead our commissary operations. The role focuses on bulk kitchen production, cook‑&‑chill processes, and long shelf‑life food manufacturing, ensuring high quality, safety, and efficiency.

Key responsibilities

• Manage daily commissary production for bulk food preparation and dispatch.
• Oversee cook‑&‑chill processes, guaranteeing shelf‑life and food‑safety compliance.
• Maintain consistent product quality, taste, portioning, and packaging.
• Plan production schedules based on business needs and demand forecasts.
• Monitor hygiene, HACCP, and FSSAI compliance across all units.
• Coordinate with procurement, warehouse, QA, and logistics for seamless operations.
• Optimize manpower utilization, productivity, and waste control.
• Drive process improvements and operational efficiencies within the commissary.

Required profile

• 8–10 years of experience in commissary or bulk kitchen operations.
• Strong exposure to cook‑&‑chill technology and long shelf‑life food production.
• Understanding of bakery production and large‑scale catering environments.
• Good knowledge of food safety, hygiene, and quality standards.
• Proven team leadership and operational management abilities.
• Degree/Diploma in Food Technology, Hotel Management, Food Production, or related field preferred.
